Head Chef
We are seeking a dynamic Head Chef committed to quality and customer service.
Primary Responsibilities
The Head Chef is responsible for all kitchen functions, including food purchasing, receiving, quality control, scheduling, safety, sanitation, and cleanliness. This includes training of kitchen and dish room employees in all aspects, completing cook tasks, maintaining product presentations, product quality, and cook time standards, and preparing all menu items according to designed recipes and specifications.
Specific Functions and Duties
* Ensures all menu items are consistently prepared according to Safari Bar & Grill's recipes, portioning, plate presentations, and specifications.
* Responsible for ordering food products according to need and ensuring the orders received have the correct count and condition.
* Conducts thorough inventory checks and accurately documents stock levels regularly.
* Controls food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes, and waste control procedures.
* Provides direct supervision of Cooks and Dishwashers and is responsible for their orientation and training in all kitchen, cleanliness, and safety aspects.
* Schedules Cook and Dishwasher staff efficiently while considering labor costs.
* Maintains appropriate cleaning schedules for kitchen floors, walls, ceilings, hoods, other equipment, and food storage areas.
* Fills in where needed to ensure efficient operations.
* Works with the General Manager (GM) to plan and price menu items, establish portion sizes, and keep updated recipes book for menu items.
* Ensures all equipment in the kitchen and dish room is kept clean and in excellent working condition.
* Makes employment and termination decisions and works with the GM on interviewing, hiring, disciplining, and terminating kitchen and dish room employees.
* Attends all scheduled employee meetings and brings suggestions for improvement.
* Supports and compliments the GM, relying on the supervisory role for smooth business operation.
* Takes care of team well-being and needs.
* Uses active listening, good communication, and problem-solving skills.
Cook Tasks
* Completes all assigned prep work.
* Practices sanitary and safe food handling at all times.
* Cleans and sanitizes the work area before, during, and after shift.
* Completes assigned daily and weekly cleaning projects.
* Performs other duties as needed.
Qualification Standards
* Previous kitchen management experience required.
* Experience in varied kitchen positions.
* Strong leadership skills.
* Strong organizational and decision-making skills.
* Communicates clearly and effectively.
* Able to place plates, utensils, pans, supplies, etc. on high and low shelves.
* Capable of safely using knives, slicing equipment, and other food preparation equipment.
* Mobility required during the entire shift.
